Cinnamon bark is obtained from a variety of evergreen trees found in Sri Lanka and India. The tree has thick, reddish brown bark, little yellow flowers, and spicy-smelling leathery leaves. It reaches a maximum height of 20-60 toes and is mostly found in tropical woodlands. The Lauraceae family includes cinnamon bark. Cinnamomum cassia and Cinnamomum saigonicum are two related species. It is grown in tropical climates such as the Philippines and the West Indies. It is not grown in the United States. The trees are pruned to just above ground level every two years. The bark is picked and cured from brand young shoots. The outer bark is removed, leaving the inside bark, which is the herb's main therapeutic component. Cinnamon's use extends back thousands of years, to at least 2700 B.C., when it was described in Chinese herbals as a remedy for fever, diarrhoea, and menstruation problems. It was employed in a similar way by Indian Ayurvedic physicians.
